The Perfect Cheeseburger
Makes 4 burgers
Active Time: about 20 minutes
Total Time: about 20 minutes
— 1 ½ pounds ground beef
— Salt and pepper
— ⅓ cup grated cheddar cheese
— ⅓ cup grated monterey jack cheese
— ⅓ cup mayonnaise
— 3 tablespoons yellow mustard
— Brioche buns, for serving
— Lettuce, sliced red onion, pickles, and ketchup, for serving
Preheat grill with two zones: one with high heat and one with low heat.
Season the ground beef with salt and pepper, and shape into 4 patties, each about ¾-inch thick. Do not overwork the meat.
Mix both kinds of cheese together in a small bowl. Stir together mayonnaise and mustard in another bowl.
Grill burgers 3 minutes over high heat, then flip and grill 3 minutes more. Transfer to low heat zone. Top each burger with a heaping 2 tablespoons cheese and close grill lid. Continue cooking over low heat for 2 to 3 minutes until medium rare.
Spread bottom of buns with mayonnaise mixture and top with lettuce, cheeseburger, sliced red onions, pickles, and ketchup. Serve immediately.
