The spooky season is upon us! Well, we are a few weeks away from Halloween but we thought we should help you plan in advance, starting with a dazzling cocktail that’s dangerously creepy and tasty.
Since summer is on its way out you will see loads of peaches in store, and friends, this is the time to load up on those summer jewels. I think they are the best right now because they are bursting with flavor and juice, so even if you don’t think you’ll use them all, get them and freeze them. For this drink though, we are using them to make a sweet pureé to flavor our cocktail.
Think of this cocktail as a hybrid between a mimosa and a gin and tonic… and an Aperol spritz (go big or go home!). There’s a sweet pureé infused with Aperol at the bottom of the glass and all gets topped with a slight touch of gin and a splash of tonic water.

Aperol, Peaches, and Tonic
- 3-4 ripe peaches
½ cup Aperol
2 tbsp sugar
1 lemon, juice
Good tonic water
Berries and peach slices to garnish
- 1. Pure the peaches, if they are soft enough use a fork to mash them, otherwise a blender will do. Place the puree in a glass jar and add the Aperol, sugar, lemon juice and let it sit for a couple hours. Strain the puree and use a spoon to make sure you squeeze the pulp.
2. To serve place one or two spoons of the peach Aperol puree in the glass with ice, add 1 shot gin, then top with tonic water and serve.
NOTE: there will be some floaties in the cocktail from the puree which adds to the spooky vibes, but if you want to avoid having too many, just strain it a couple more times.
