Summer is here which means grill outs, poolside hangs, and backyard cocktail parties are in full swing! The folks that have spent the last 6 months enduring winter probably have some sort of dreamy summer thought that has helped get them through shoveling their car out of 3 feet of snow at 7 in the morning. For most, I’d imagine it’s the thought of jumping into a pool for the first time that year or feeling the sun on your face while lying out at the beach. Me? I dream of summer produce and all the mouth-watering recipes I will be able to incorporate them into while entertaining. Although juicy tomatoes are my all time favorite summer gem, fresh berries are a close second (especially if you are able to pick them right off the vine yourself).
Because I don’t like to hide fresh berries in all their peak season glory, I love finding ways to serve them raw like with this Sweet Cinnamon Fruit Dip. If that wasn’t already a win for this dip, it also requires no cooking and can be whipped up in less than 5 minutes. The rich mascarpone cheese helps create a velvety texture and the flavor, so I’ve been told, reminds many of eating ice cream in dip form. Plus, all your guests will be so impressed you created a recipe with a fancy cheese like mascarpone.

Sweet Cinnamon Fruit Dip
Makes one heaping cup [295 G]
8 oz [230 g] mascarpone cheese
1 tsp almond extract
1 tsp ground cinnamon
2 Tbsp honey
3 Tbsp whole milk
In a small bowl, whisk together the mascarpone cheese, almond extract, cinnamon, honey, and milk. Serve right away or cover and chill until ready to serve. Serve with fruit.
