There’s something inherently summer about digging into a juicy, ripe mango. You don’t have to stop at eating this tropical delight raw, though. Take a page from Wit & Vinegar’s Billy Green and incorporate it into summer treats like this delightful upside-down cake! Paired with a scoop of vanilla ice cream, you’re going to want to pull this bad boy out at all your pool parties and potlucks.

Mango Upside-Down Cake

For the Upside-Down:

    1/4 cup butter
    1/3 cup lightly packed light brown sugar
    pinch of salt

For the Cake:

    1 1/3 cup flour
    1 1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/4 butter, softened
    3/4 cup sugar
    zest of half a lime
    1 large egg
    1 cup buttermilk
    2 large red mangoes, pitted, peeled, and sliced*

*To easily peel and slice the mango after you cut the flesh away from the pit, gently slide the mango half skin side out on the rim of a drinking glass.

Preheat your oven to 350* and grease a round 9″ cake pan, line with parchment if it’s not nonstick.

In a medium saucepan melt down the butter and add the brown sugar and salt. Whisk to combine, then add to the prepared cake pan.

In a medium size bowl whisk together the flour, baking powder, and salt. Set aside

Using an electric mixer, beat together the butter, sugar, and lime zest until well combined, about 1 minute. Add the egg and beat for an additional 30 seconds, then on low add half the buttermilk, followed by half the flour mixture, the rest of the buttermilk, then the rest of the flour mixture and mix just until combined.

Arrange the mango slices however you want to on the brown sugar butter mixture then carefully spoon and smooth the batter over the top.

Bake for 35-40 minutes, until lightly golden brown and a toothpick inserted clean. Remove from the oven and wait a few minutes, no more than 5, then carefully invert the cake onto a large plate. Serve warm with vanilla ice cream.
