Over the past couple of Fridays, we’ve shared some seriously tasty recipes by Christiann Koepke of Portland Fresh. You’ll be pleased to hear that today is no different and if you’re not sure what to make for dinner this weekend, this Garlic Cayenne Confit Toasted Parmesan Baguette recipe has GOT to appear somewhere on your menu! Get those taste buds ready.
Garlic Cayenne Confit Toasted Parmesan Baguette
¾ c. butter
1 large head garlic, minced (8-10 cloves, depending on size)
½ – ¾ t. cayenne pepper (½ for medium heat, ¾ for hot)
1 t. sea salt
½ c. finely grated parmesan cheese
Baguette, sliced whole lengthways
In saucepan, melt butter and allow to simmer on low for about 5 minutes to enhance the flavor by lightly browning. Add minced garlic, stir, and cook for 3-5 minutes or just until it barely begins to brown. Remove from heat and add cayenne pepper and salt, stirring until incorporated throughout. Place in fridge to cool until it begins to solidify, about 20 minutes. Note: there will be extra confit- reserve for later use (spread on everything!!).
Preheat oven to 450 degrees F. Spread confit over bread and sprinkle generously with parmesan cheese. Bake for 8-15 minutes or until golden brown. Broil to brown top in the last couple of minutes if desired. Slice and serve warm.
