There are few things better to woo your sweetheart with than something sweet, and this decadent treat from cook and baker Marcella DiLonardo certainly takes the cake. Dubbed a “naked cake” due to its unfinished exterior, this dessert’s delicious combination of vanilla, cinnamon, and strawberry is sure to knock your socks off! Bon app├ętit!

Vanilla Cinnamon Layer Cake with Vanilla Buttercream & Strawberry Jam

For The Cake

    1 Cup Unsalted Butter, Softened
    1 ½ Cups Raw Sugar
    3 Eggs
    1 Teaspoon Pure Vanilla Extract
    ½ Cup Oil
    2 ½ Cups All Purpose Flour
    2 Teaspoons Baking Powder
    1 Teaspoon Salt
    1 Teaspoon Cinnamon
    1 Cup Whole Milk

For The Frosting

    1 Cup Unsalted Butter, Softened
    2-3 Cups Icing Sugar
    1 Teaspoon Pure Vanilla Extract
    1 Cup Strawberry Jam, for layering (I used Bonne Maman)

For the Cake: Preheat oven to 325 degrees. In the bowl of a stand mixer with the paddle attachment, cream butter & sugar until light + fluffy. Add the eggs one at a time, scraping down the sides of the bowl after each addition. Add the oil & vanilla until combined. In a separate bowl sift the flour, baking powder, salt & cinnamon. Gradually add these to the stand mixer, alternating with the milk. Once the batter is smooth, evenly distribute amongst two greased 8 or 9-inch cake pans. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool to room temperature before removing from pans.

For the Frosting: In the bowl of a stand mixer with the paddle attachment, add butter, sugar & vanilla. Beat until light & fluffy, about 6-8 minutes.

For Assembly: Slice each cake layer in half so you create four even layers of cake (feel free to skip this step & make a two layer cake). Begin with a layer of cake, followed by a thick coat of frosting, followed by strawberry jam, followed by another layer of cake. Repeat. Frost the top & outside of cake as desired.

NOTE: If you do not want a naked frosted cake, double frosting recipe for a fully frosted version.

I love the simplicity of this cake. Vanilla and cinnamon sound like the perfect compliments in this cake. I also like the classic buttercream frosting, and I’m sure the strawberry jam acts the perfect amount of flavor. Thanks for sharing the recipe–I’ll have to try it sometime.
