There’s nothing quite like a visit to the countryside during the winter – roaring fires, cozy nooks, long walks, hot cocoa…I could go on. For Lucy Heath of Capture by Lucy, Christmas is also an important time to spend with her family and creating new traditions. Here she not only shares how to pull together a country-style Christmas table but also lets us in on her recipe for festive gingerbread men. Yum!
Festive Gingerbread Men
100g butter or margarine
5 tsps ground ginger
2 tsps ground cinnamon
1 tsp bicarbonate of soda
175g soft brown sugar
4 tbsps golden syrup
In a mixing bowl combine the flour, butter (or margarine), ground ginger, ground cinnamon and bicarbonate of soda. Mix with your fingertips until crumbly.
Add the soft brown sugar, golden syrup and egg and stir until it forms a firm consistency. If you find the mix a little wet, add a touch more flour and keep stirring until you have a pastry type texture.
Roll out your mix to your preferred thickness and cut your shapes with a cookie cutter. Lightly grease a baking tray and cook in a pre-heated oven at 180c/Gas Mark 4 for 12-15 minutes. Check after 10 minutes to make sure they are not burning as all ovens vary a little.
The most important part is to have fun decorating them! They make fantastic place settings if you add a decorative initial to the belly of the gingerbread man!
