Superfood Porridge by Ashley Neese
Natural foods chef Ashley Neese is sharing some of her favorite healthy + hearty winter breakfasts with us this season! Her Superfood Porridge is an amazing way to start the day on a cold morning, packed with good-for-you ingredients that taste like a treat. Read on for the recipe!
2 ¼ cup water
1 cinnamon stick
1 cup kasha
1/8 teaspoon sea salt
2 tablespoon goji berries
2 tablespoon dried mulberries
1 tablespoon cacao nibs
2 tablespoon hemp seeds
¼ cup unsweetened coconut flakes
1 cup fresh almond milk
1. Add the water and cinnamon stick to a medium pot. Bring to a boil over medium heat. Pour in the kasha, add the salt, and reduce heat to low. Simmer uncovered for 7 minutes.
2. Add the goji berries and mulberries. Continue cooking for another 7 minutes until the water is absorbed and the kasha is chewy. Turn off heat and stir in the cacao nibs.
3. Divide into two serving bowls. Top with 1 T hemp seeds each and a large pinch or two of shredded coconut. Serve with fresh almond milk.
This breakfast will keep for 2 days in an airtight container in the fridge. Reheat on low with a bit of water to keep it from sticking to the pot.
