Our friends at Kinfolk sent over a Spring-time treat!…
After a long & dark Danish winter, we were aching to get out and enjoy the improved reading on the thermometer. So we did what any desperate sun-seeker would do: headed to Dyrehaven, the deer park just north of Copenhagen, and picnicked. We brought along a basket of dyed Easter eggs and used them as the basis of our smørrebrød. Smørrebrød (“butter bread” in Danish) is open face sandwiches on a dense, dark rye bread eaten with a fork and a knife. It is to Denmark what peanut butter and jelly is to America — typical and comforting.
We started with the foundation of rye bread, then added on some sliced eggs and tomato, and topped it off with chives and a dash of salt and pepper. A few of us got a bit more fancy and piled on shrimp with a topping of mayo and a lemon slice.
By the end of our meal, a herd of deer passed us by and stopped to stare for a few moments. At that moment we learned what “deer in headlights” means. Most likely they were either surprised to see us out so early in the season or were wanting to join in. We’d like to think the latter.

This picnic is making me rethink the hard boiled egg, seriously, this spread is palpable.
